Homemade Fishcakes and Salad. I initially toyed with making
it somewhat Asian in style, adding chilli, lime and the like, but restrained
myself to simple flakes of white fish with creamy mashed potato.
I adlibbed some sauce by thickening the milk which the fish
cooked in and squeezing the juice of a lime into it. Of which the combination
of sour and milk is usually disastrous, but turns out fine when spooned over
the fishcakes. It’s a bit more work, but also more satisfying when compared to
shop bought versions.
